Quinoa Salad

1/2 cup golden quinoa
1 avocado
4 scallions, chopped
1/4 tomato
1 lemon, squeezed
1/3 orange pepper
1/3 cucumber, sliced
cilantro, chopped

1. Boil quinoa in water; drain and chill until cool.

2. Chop avocado, scallions, tomato, pepper, cucumber, and cilantro.

3. Add ingredients to quinoa and mix; add lemon juice.
