Potato and Kale Enchiladas

4 yellow potatoes
3 leaves kale, chopped
1/4 yellow onion, chopped
1 teaspoon chili powder
1 teaspoon cumin, dried
1 teaspoon oregano, dried or fresh
5 cloves garlic, minced
1 lime, squeezed
2 enchilada wraps

Cook: 15 min
Ready In: 20 m
Serves: 2-3

1. Peel, chop, and boil potatoes in water.

2. Drain potatoes and mash.

3. Put mashed potatoes in empty pot, add other ingredients (except lime juice), and mix two minutes on low heat.

4. Lightly heat wraps.

5. Add lime juice to potato mix and stir.

6. Add potato mix to wraps.
