Vegetable Noodle Soup

6 cloves garlic
2 oz. chives
2 sticks celery
2 carrots, large
1/2 yellow onion
2 cups broccoli
2 cups parsley
1 shallot
2 tablespoons turmeric
6 oz. sprouted organic tofu, cubed
4 tablespoons nutritional yeast
5 cups water
4 oz. Eden Buckwheat Soba pasta noodles

Prep Time: 20 m
Cook: 15 min
Ready In: 35 m
Serves: 2

1. Bring water to a light boil. Reduce to low heat.

2. Lightly blend garlic, chives, celery, carrots, onion, broccoli, parsley, and shallot in a food processor.

3. Add blended ingredients and turmeric, tofu, and nutritional yeast to water.

4. Simmer on low heat (light boil) for 10 minutes.

5. Add Soba pasta noodles and cook for 5 minutes.
