Pesto Veggie Pizza

The following ingredients comprise the sauce:
2 oz. fresh basil
3 cloves garlic
13 oz. canelli beans
1 tablespoon water
2 tablespoons nutritional yeast
1 lemon (juice)
The following ingredients comprise the topping:
1 pizza crust
1/4 purple onion
1/2 red pepper
3 cloves garlic
1 small tomato
3 oz. spinach
20 kalamata olives

Kitchen Equipment: Pizza cutter (or knife), food processor
Prep Time: 20 m
Cook: 10 min
Ready In: 30 m
Serves: 2

1. Preheat oven to 400 degrees.

2. In a food processor, lightly blend the sauce ingredients to the consistency of hummus. Add more water or lemon if necessary.

3. Spread the blended sauce ingredients on the pizza crust.

4. In the food processor, pulse blend the topping ingredients to a chunky consistency.

5. Spread the pulse blended topping ingredients on the pizza crust on top of the sauce ingredients.

6. Place in oven for 10-15 minutes. Cooking time will depend on crust thickness (10 minutes for thin crust; 15 minutes for thick crust).
